AI is not quite taking over, it's just being used by many people because it has become a good tool (in some situations) and it's getting cool around the entire world for using it.

Artificial Intellingence is uses by many people but the freelancing websites are still being used by some other many people and learning how to write code (how to start programming) is still being cool. The answer is simple, the coding is not dead no matter how much some people er even you do really want that. We are still around doing that and we love it. The Artificial Intellingence is good some times but it's not that good to replace us. I can be debugging stutff but it's not debugging the real problems in programms, mobile applications or real life. Not yet, anyway, and it may not still be doing that in the following decade.

Just stay online and cools and keep using software engineers like me. We are still valuable and we'll keep doing what we love (including writing code and kendo) for many years from now on.
