Does having more blogs on a website lead to increased traffic?

In one word yes, you'll have more traffic, but you can have only one blog with different categories, you need a good SEO for each of them and you need to promote your articles.

For example, if you consider this as a blog (I am writing on it often but I am not thinking about myself as a blogger because I am also programming, I built and extended this website among many others, and I am also writing science fiction stories and I also practice Kendo) I have more categories on this website and I have more websites, each one dedicated to that specific activity. I am writing about computers and health and thinkgs that are going good together like web design and SEO. You can't consider them as being different blogs, they are categories on the same website.

Writing ofter about different things on the same website will bring you more and more visitors as long you are promoting them on places like social media or other websites or you are using ads to do that. You can also use a Youtube channel where you can upload your videos and you can integrate those video in your everyday posts but that about increasing your traffic not exactly about your blog.
