Stealing a product and selling it later is piracy. Downloading a movie using torrents and later selling copies of them on different formats is piracy. Watching a video on Youtube is free with or without adblock on. Reading a free article like the articles you can find here with adblocks scripts on is just OK (not because I don't use ads, it's because the content is free - you can read it or not, your choice). If I didn't want you here with adblocks on I would block you (I've developed a Joomla module named JBlur in order to blur the content for a Joomla website in some conditions I can always further develop the script used on this webpage to blur the webpage if Javascript is blocked on this page).
Youtube wants more and more money and the company ownling it is selling ads by Youtube - if you watch the ads they are getting those money and the company has started a war against adblockers. I don't know who is winning because my adblockers are still active and I haven't see any new movement on Youtube recently.
My conclusion is: if you want to buy a product or a service purchase it. Spend money on it. If somenbody is posting a video or a written think on internet without asking money on it (you have the online stores and e-commerce for that) than that content is free. You can try to get money from it but that depend of the visitors if they want to see or not the ads. If you want to impose the ads some of them may avoid you, your website and your Youtube channel. Your choice, but adblock is stil no piracy.
